Duck meat is a part of the traditional Assamese cuisine since a very long time. Today Discover East bring you the recipe of Simple Duck Curry by Subhalaxmi Chakravarty.
This one is the possibly the most simple and easiest of all the traditional duck recipes. The following are the necessary ingredients and method.
Ingredients for making a Simple Duck Curry
- Dressed duck meat – 500 grams
- Potato – 2 medium size (cut into large chunks)
- Onion – 3 medium size (roughly chopped)
- Ginger garlic paste – 4 tablespoons
- Ground cumin – 1/2 tablespoon
- Turmeric powder – 1 tablespoon
- Ground black pepper – 1 teaspoon
- Green chilies – as per taste
- Red chilies – 2 (dried)
- Bay leaves – 2
- Mustard oil for cooking
- Salt as per taste
Method of Preparation
- Start with heat oil in a Kadhai.
- When the oil is a bit hot, add the dry red chilies and bay leaves.
- Add the chopped onions and fry them till they reach a nice golden brown color.
- Carefully add the ginger garlic paste and green chilies.
- Add the duck meat and fry for few minutes on a medium flame.
- Next add the cumin paste and turmeric powder.
- Put in the potatoes, followed by the salt and keep frying for about 15 minutes on medium flame.
- If the duck meat had some fat, it will start melting by now.
- At this stage, add water and cover the pan with a lid.
- Don’t forget to stir it from time to time until its properly cooked.
- At last, add the black pepper paste and cover the pan for another 2 to 3 minutes then switch off the flame.
And now your simple duck curry is ready to be served. It goes really well with steaming hot rice and a slice of lemon and a krishna jolokia on the side. You can also garnish it with freshly chopped coriander leaves.
