Egg is a very important source of proteins and it is consumed across the world. And as different people across different cultures and taste palates consume it, a lot of new egg recipes are created.
Being a very versatile food item, the simple egg can be served in a variety of ways and means. It can be consumed with a variety of spices, or without any. It can be a side dish ,the main course and sometimes the whole meal itself can comprise of different preparations of eggs.
On the occasion of World Egg Day, Team Discover East brings to you two traditional Assamese recipes of eggs. The Ranga Dima and the Sungat Bonua Koni.
Ranga Dima
Barpeta is associated with the festival of Holi. Called Doul Utsav in the region, it is the celebration of the life of Lord Krishna. Colors, called Fakuwa add more excitement to the festival. In order to play with colors, sing hymns and to greet each and every person you meet on the road takes a lot of energy. Ranga Dima and Alu Bhaja comes to the rescue in this situation !
Ranga Dima – literally translates to red eggs. They are nothing but hard boiled eggs. Which are then marinated in salt and turmeric powder and deep fried. Some people add a pinch of red chili powder for a deeper red color.
Sungat Bonua Koni
Almost all communities and ethnic groups have a set of unique traditional games and sports. For the Assamese, one of them is Koni Khela . It takes place in the morning of Magh Bihu, after the Meji is lit and the prayers are done.
Young children bring the eggs from their own poultry to compete against each other. The first egg to break is thrown into the still burning ashes of the Meji. The rest are ofter put in small bamboo hollows, called Sunga and the fire. A half cut bamboo piece can also be used as a tiny pan. Sometimes a pinch of salt is also added and eggs cook within minutes.
