Holi is one of the main festivals of Hinduism. Also called the festival of love, Holi is a celebration to welcome the spring season. And same as for any other festival, Holi too has a set of festival special cuisines.
Assam celebration of the festival of color includes a lot more than just color and it is called Fakua or Doul. The tradition of Holi Naam or Holi Geet was created by the neo-Vaishnavite Saint Srimanta Sankardev. These are songs describing and praising the Lord Krishna. Eco friendly colors and traditional musical instruments are all part of the celebration. Another key part of the celebration is the part where the small idol which is usually kept in the Doul or temple premises is taken out and carries across the locality.
And since food is an integral part of the celebrations, Assam also has some festival special cuisines. All the fun and games, the singing and dancing and the travelling around all definitely need a lot of energy. And this problem is solved by Ranga Dima – fried hard boiled eggs and Alu Bhaja – fried potatoes. These are the cuisines everyone is going to offer you if you are enjoying Doul in Barpeta. Seasonal coolers, specially the bael sharbet or wood apple cooler is available during this time. It is loaded with nutrients and hydrating at the same time.
Sweets and deserts have to be a part of any celebration. And payokh is what is offered as Prasad by a lot of the temples on this day.
